About Our Oysters

Petite and briny, deep-cupped and crisp, or grilled over blazing coals and topped with savory herb butter, fresh oysters are a joy no matter where they’re from. Eat them often, and you’ll start to notice—and crave—their distinctively delectable flavors influenced by growing methods and regions. We source local oysters from sustainable shellfish growers and small farms. While most oysters we serve represent the West Coast from Northern California to British Columbia, Canada, we may occasionally feature special selections from the Atlantic and beyond.
